guix: add bitcoin-qt runtime libs doc in symbol-check

Browse Source 
libfreetype and libfontconfig are our two remaining runtime libs for
bitcoin-qt. According to #29977 Ubuntu 22.04 should be considered the
baseline for what is supported. Document that.

Closes #29977.
